I want to say that since apples are here, Fall must be around the corner but thats not really all that applicable in the Bay Area so I’ll just say Apples are here! and THAT means, Classic Apple Pie is here! I use several types of apples to get the bouquet of apple flavor Im after for my pies. Gala, Fuji, Gravenstein, and which ever other ones my farmer has that week! Why would I do that, you ask? Well, different apples have different pectin levels and sweetness/tartness levels so by combining a few together I get the flavor profile I want! I’ll have my Classic Apple Pie available to you by the Whole pie, Mini pie and Slice. Treat yo self!
