In all honesty, I don’t actually know why its called a ‘French’ Coconut pie. Maybe because the top gets all crispy and chewy similar to a french macaroon? I don’t know, but what I do know is… this pie is amazingly delicious. The filling is a soft, sweet vanilla-y custard topped with this toasty, crunchy, flaked coconut. This pie turned out even better than I imagined. Which is saying a lot because I hold my own baking in high regard! Buy a slice and experience bliss. Tropical style.
